How do we conserve it?


                      In order to prevent the piece from drying and oxidizing, the best thing

                      is to cover it. How? Each maestro has his theory. Some say that with the

                      slices of fat withdrawn, others with transparent plastic and others say

                      that it should be covered with a cloth.




                      Teruel ham can remain open for about three months although. Since it

                      is such an exquisite delicacy, it normally lasts more than a week open.



                                  How is it eaten?


                      Teruel ham must be consumed at room temperature, never cold, more

                      or less 21º C. At this temperature it is possible to observe the shine of

                      the natural fat, but if it is too cold, its aspect is rather opaque.




                      An endeavour must be made to cut fine slices (almost transparent)

                      and with some intramuscular fat to make them juicier.
