HOW IS
TERUEL HAM CUT?
Popular knowledge says that the
good Teruel ham must be cut with a
knife so that it can be tasted with
more intensity. To do this, we must
first place the piece on a firm, sound
ham stand which facilitates turning
and does not tremble when cutting.
The ham stand must be placed
at a height and in a position in
which the cutting can be carried
out comfortably with no forcing of
movements or postures.
Ideally a ham knife, another
short bladed knife in order to
skin the ham eliminating rind
and fat, and a sharpener known
GUIDE OF THE TERUEL´S HAM as a “chaira” should be availa-
ble. Remember that the sharper
the knives, the less risk of cutting
ourselves.
